Recipes for Your Next Backyard Barbecue
We’re just a few weeks away from Memorial Day weekend and a little over a month away from summer. You know what that means: barbecue season is upon us! So, in an effort to prepare you for your many upcoming backyard barbecues, we’ve compiled a list of member-submitted recipes that will be perfect to enjoy while you’re sitting in your lawn chair in the sunshine.
Paradise Island Punch

14 cups water
1/4 cup instant tea
1-3 cups sugar
3 46-oz cans orange juice
3 46-oz cans pineapple juice
Combine. Add 3 quarts ginger ale just before serving. Float 1 pint orange sherbet in bowl.
Great Baked Beans
2 lb can pork & beans
1 cup brown sugar
1 cup ketchup
2 bell peppers
2 onions
1 lb bacon, diced
2 tsp Worcestershire sauce
Mix all together. Bake at 325° for 2 1/2 hours.
Teriyaki Burgers

¼ cup soy sauce
¼ cup honey
2 garlic cloves, pressed
1 tsp ground ginger
1/3 cup mayonnaise
2 lbs hamburger
6 hamburger buns
Stir together sauce, honey, garlic, and ginger. Stir 2 teaspoons of soy sauce mixture into mayonnaise and set aside. Combine the remaining soy sauce mixture with hamburger meat. Form into 6 patties. Cook on stovetop or grill until done. Spread mayonnaise mixture on buns and fill with patties.
Quick Refrigerator Sweet Pickles

5 cups thinly sliced cucumbers
2 cloves garlic, halved
2 cups water
1 tsp mustard seed
1 tsp celery seed
1 tsp ground turmeric
2 cups sliced onions
1 cup julienne carrot strips
2 cups vinegar
4 tbsp Equal
Place sliced cucumbers and garlic in a glass bowl. In a medium saucepan, combine water, mustard seed, celery seed, and turmeric. Bring to a boil. Add onion and carrot. Cook 2 minutes. Add vinegar; bring to boil. Remove from heat. Stir in Equal. Pour over cucumbers and garlic. Let cool. Cover and chill at least 24 hours before serving. Store in refrigerator for up to 2 weeks.
